Refrigerator Rolls

Have you guys ever heard of Refrigerator Rolls?  

My Cute Mom made these shared these for a family dinner.  I HAD to have the recipe!  My mom is the biggest foodie ever!  When we go to the thrift store together she always heads straight for the cookbook section.  She ALWAYS finds the best ones too!   Her secret...family,reunion and ward cookbooks! 


Then...you open them up....MMMMMMM!


Add some butter and jelly and enjoy!

Refrigerator Rolls
1 C.shortening
2 t. salt
4 t. yeast
4 eggs
1 C. cold water
3/4 C. sugar
1 C. boiling water
1/2 C. Luke warm water
7 1/2 C. flour

Cream shortening, sugar,salt. In luke warm water dissolve yeast. Add boiling water and stir to melt shortening mixture. Add eggs and beat. Add flour with yeast and cold water alternately and stir until dough is well combined and smooth. Cover and refrigerate for several hours or overnight. Make rolls about 2 hours before baking so they can rise and double in bulk. Bake at 450 degrees for 10 minutes. This dough makes delicious sweet rolls. It will keep for up to a week in a refrigerator.



When they come out of the oven I  used butter and spread it all over the top.
THEN....
I used a pampered chef cookie scoop to make dough balls and I froze all but the pan full that I baked. I now have portioned out rolls ready to just  thaw and raise!

"Let's Be Friends!" Friday Blog Hop

But...before we start, I have to update you on my mantel situation.
Oh you guys, I am so indecisive.  Sadly the joke at my house is, before the season is over I have rearranged the decor a-ba-zilion times and by the time I get it the way I like it, it's time to take it down!  Do I drive my poor hubby crazy?  Probably!  Good thing he kinda likes me a little!

Ok...This is what some of  it looked like before....

So I took it all down...and this is the simple mantel I now have!
I went to the dollar store picked up like six different leaf garlands so that I could intertwine the glittery with the regular, picked up a few more crows...and this is how it turned out. 

It even matches my cute-sy ,Fall trees....

mmmm...So much more ME! LOVE IT!

Happy Halloween Glitter Eye Frame

Hey!

Thursday is Tutorial Day!
When Courtney from A Diamond in the Stuff  showed off her A.D.O.R.A.B.L.E. Googly Eye Halloween Frame 
I knew I  wanted NEEDED one too!
Have you checked out her blog?  Well if not you need to!
(Then you can all thank me later..ahem...)



Yes, I did!
I so copied her brilliant idea!

This is what I used for mine:
-Dollar Store Frame
-Lime green glitter (also from the dollar store, came in a pack of 3)
-Mod podge/ Brush
-Glue Gun
-Googly Eyes (dollar store)
-leftover piece of scrapbook paper
-Happy Halloween printed out on white paper


Now, this is how I did it!
I mod podged the entire frame. While it was still wet, I went to town sprinkling that glitter everywhere. After I glittered it, I waited about a 1/2 hour, Then turned the frame upside down to dump off the excess glitter, and that is when I realized it didn't stick in some places. But it's ok with me. (I think....for now)  Next, I modpodged over the glitter so it wouldn't come off.
I did a pretty heavy coat. This took about a hour to dry. 
(in the meantime I was checking it every 5 minutes 'cause I'm impatient!)
I wanted to start gluing on those eyes! All right, now that is was finally dry, I started laying the eyes out on it to kinda get the idea where I wanted them, Then I decided just to glue those babies on because they were't staying where I put them anyway so I randomly glued, starting with the big ones first. After they were all glued on, I smiled....
yep, a big one cause I already loved how it looked!
  Then I went through my scrapbook paper stash and found some paper that I liked, and cut it out stuck it in the frame and then realized I needed to have it say something...hmmm..
that is when it has sat for a few days....then it came to me! 
I was trying to decide what I could do to not take away from the cute paper. If I printed on it, the words probably wouldn't show up, if I used too white then it would stand out too much. I decided to use the white paper I chose the font ELISE and then printed it out, ripped about the wording, and here's my brilliant addition, I did a couple of shakes of the lime green glitter onto the glass, layed the Happy Halloween words in,then the paper..no glue or anything, put the back of the frame on and did a little happy dance because I LOVE how it turned out!
Now...the question is what do you guys think?
Do you all think I should re-glitter the bare spots or leave it?

Thoughtful Morning


This was the way our morning went... Wake up : 6:45AM

Me: "Hey Jen, It's time to get up."
Jen: "K Mom, just give me a sec to wake up"
Me: "K, I'm going to get in the shower so please be up by the time I get out."
Jen: "K, Will you start my shower for me?"
Me: "No...when you get up just hop in."

20 minutes later...Jen is in the bathroom! YAY! I didn't have a arguing match with her! I go get her lunch ready, make her some toast, get her insulin ready, and then come upstairs. This had taken at least 10-15 minutes. I don't hear the shower running, just water running...like filling the tub, running. So I knock on the bathroom door, open it, and there she is just sitting in a tub of water with the water just running on her, and I start grumping....
Do you have your clothes ready? "Come on ! Get out of the tub!" H.U.R.R.Y!!!
It is now almost 7:30 AM and she still has to get dressed, blow dry and style her hair, eat breakfast, take her insulin, brush her teeth and make sure she puts on her deodorant! AND we still have to walk to the bus stop, pick up a friend on the way and do this all in 20 minutes!So she gets out, which takes her another 10 minutes!
(I am so not kidding) which then frustrates me more.She comes into my room, I tell her we don't have time to blow dry all of her hair.  We go into the bathroom so I can blow dry her bangs and flat iron them, I tell her as I'm putting Mousse on the back of her hair to check her blood before she eats...This is when she takes a piece of her toast, pulls the crust off, and shoves it in her mouth.The entire time watching me in the mirror to see my reaction!
Really? 
Did she really just do that? 
Then I go off about how rude and disrespectful that was. How she is grounded, and then ask her why she did it.The answer is, "Because I wanted to just taste it!" Ok. fine, but the way she did it wasn't!
I tell her to go finish getting ready, I have to take the dogs out. By the time I'm bringing Remi back her friend calls to see where she is. She checks her blood, I give her in insulin, and we leave. Did she brush her teeth? Put on her deodorant? I don't even know! So we're off. We have Remi with us as we're walking. She tells me it's my turn to say morning prayer. I mumble, "Yeah, I sure need it since I'm walking Remi first this morning." She giggles. I say the prayer. We meet her friend at the corner and I walk behind them at first. Then realize they aren't going to talk if I'm there. So I walk ahead of them. Next thing I know I see two little kiddos running, their back packs flying back and forth on their backs. The little boy is running in front of his little sister and you hear him yell "Love you Dad!" The Dad (who is standing out on his porch watching them run to catch the bus) says,"Love you too!" Then the little girl  mimics the same thing to her Dad, and her tells her he loves her too. The whole time they are running, not looking back, then the little boy yells. "Have a great day at work Dad" and he chuckles and says "K". My first thought was, there is a lot of love in that home! Jen laughed and I almost wanted to cry. After the morning we just had, I felt so guilty. Was my house filled with "Love"? Why did I get so upset? I could have handled the situation better. Now we are at the bus stop and I continue walking, I turn and say,"Have a good day at school girls" You know, Jen is too big for the hugs and I love yous in public because it just isn't cool (Which has been kinda hard for me to get used to) . Then Jen yells..."Mom, I Love you!" I get all teary eyed and tell her I love her too!

Yeah, our morning wasn't the best, it was rushed,chaotic with a little grumpiness but,I know my Pretty Princess loves me and I sure love her, and just because some mornings are crazy, hurried, hectic and sometimes a "grump" happens  doesn't mean out house doesn't have love!

Now for the Oh so yummy recipe...
(I wish I knew who I got this recipe from...so I could give them proper credit)


 My cute Mom invited us for Sunday dinner.  I wanted to take dessert.
I've been wanting to make this recipe for a while.  I got it from a blog last year and I really wish I knew which one so I could THANK her.  These are seriously to die for!


Lynn's Pumpkin Chocolate Chip Cookies

1/2 C. Unsalted Butter (room temp.)
1 1/2 C. Sugar
1 C. Canned Pumpkin
1 Egg (room temp.)
1 t. vanilla extract
2 1/2 C. All Purpose Flour
1 t. Baking Powder
1 t. Baking Soda
1/4 t. Salt
1 t. Cinnamon
1/2 t. Nutmeg
1/2 C. Chocolate Chips

Preheat oven to 350 degrees In a bowl mix butter and sugar until fluffy. Add pumpkin,egg and vanilla. Beat until fluffy. Sift dry ingredients. Mix well. Mix in Chocolate Chips. Bake 10-12 Minutes. Makes 3 dozen cookies.


Ok, but, I just couldn't stop there.  I just HAD to make some cream cheese frosting.

Cream Cheese Frosting

(Betty Crocker New Cookbook)

1 8oz. package Cream Cheese
1/4 cup (stick) butter
1 t. vanilla
2 t. milk
4 C. powdered sugar

Beat Cream Cheese,butter,milk,vanilla in a medium bowl until smooth.  Gradually best in powdered sugar at a low speed.  1 cup at a time until smooth and spreadable. 

I made the pretty, perfect round ones into Whoopie Pies..
(you know, the with whoopie pie craze going around, I was feeling a little behind!)
  Then I had some not so perfect round ones.

they started out like this..... just a dollop of frosting on the top.


But then I stacked them...and they became this: two layers of pumpkin chocolate-y cream cheese-y goodness.

 I didn't take pictures of the ones that were going to my Mom and Dad 's
(they looked much prettier).  ..
They looked a little different but, sure tasted the same!
I left all the rest but these three with them so that they would eat them and not me!


Were they absolutely DELISH?  YES!
The pumpkin flavor is subtle and everything just works so well together!


Will I make them again? DEFINITELY

Happy Fall...Meet My Sidekicks!

Today is the first day of Fall!  *SIGH*
My windows are open and I am enjoying the cool breeze! In fact, my toes were a little cold so I had to cover them with a blanket! My little Mr. Ru is snuggled up next to me. Love it!
Speaking of Ru, I need to introduce you to my "side kicks!"


MEET RUGER

Uhhh...yeah, my bed is a mess, my dress was just thrown on it...don't mind that though, just look and the cutie protecting his ball!


  AKA..Mr. Ru, Teeny Tine,Handsomest,Little Buddy, and Roogs  
{and anything else I can think to call him}
And yes, he knows all of his names!  Ruger is a Rat Terrier.  He is tiny yet a tough little guy.  He loves to snuggle, he knows I don't really like kisses (because of the way his breath smells...Umm..nasty)  I can say give me a hug-a-hug and he will lay his head against me and push..giving me just what I asked for!  He sure makes me happy.  He follows me every where except for when I'm cleaning after a while he realizes that I'm not going to sit down anytime soon, so he will just go to the top of the steps and lay and wait! He is very territorial.  He picks and chooses who he likes.  If he likes you...he LOVES you.  There is no in between with this little guy.


Meet Remi..







AKA ...Remington, Rems, Naughty Pants, Remmers.and Sunshine on my Shoulder.  Yes, She knows all her names too! { I think I may have a nickname problem..ya think?}
This little girl is so freaking adorable!  I just love her!  She is a German Shorthair Pointer.  She loves blankets and the little space heater.  She loves to lay in the sunshine.  She is so hyper and busy, hence her name Naughty Pants.  When she was tiny and Pretty Princess was getting ready to take a bath and her water was running, this little girl would jump right in the bath and start splashing away, digging at the running water!  When I would be unloading dishes from the dishwasher, she would just hop right up on the door that was laying out!  She keeps us laughing because of her sweet personality.  Her latest craze is chasing bugs and shadows.  I actually called the vet because it has become an obsession to her, she will lay in the light that comes through the windows and watch for bug shadows.  I got online and read that it could be a neurological problem.  When I called the vet, he told me that this breed in extremely hyper and can get bored easily, she is making up her "own game."  He suggested to take her for more walks, like long walks...he even said, when you think it's been long enough, go even further...Really?  She has the sweetest personality, you can look at her she will tilt her head in a way that lets you know she is trying to read you facial expression.  She is a "Talker"  She barks to let us know what she wants. She and Ruger are like day and night, yet best friends!

I had dogs growing up.  Hubby didn't so when he wanted to get a dog, I was like really? Okay, we have to get one that won't shed.  He chose ours and guess what!  They shed like crazy!  I vacuum twice a week  so there isn't so much hair!  I don't want my house to be one of those DOG houses.  So there you have it... tmy side kicks...The Ru and Rems love them!

Magic Wands and Pumpkins...

Happy Monday!
How are you all? Are you all loving this cool weather?  I am so loving having my windows open and feeling the cool breeze!  Love me some FALL!
This time of year Pretty Princess and I have a tradition of making Halloween dinners and munchies out of 
our "Fun for kids recipe book" and I was looking for a fun and easy recipe I could make for her and the hubby before they got home on Friday.  This was one of the fun Halloween foods they had in it. 
(and I had all the stuff for)
They called them Magic Wands..
Pretzel Sticks,
White Chocolate(melted)
and to make them magical...you gotta have the sprinkles and chocolate chips! 
You can garnish with anything you have though....


Cute and fun....they taste good too! 
All you do is melt the white chocolate, dip the pretzels in it, then sprinkle right away so the chocolate doesn't harden! Now I just need to dip both ends so that Pretty Princess will eat the whole thing!



I had some marshmallows that needed to be used up... so I made some rice krispie treats shaped as pumpkins! 


I just added a 3 drops of yellow and 2 drops of red food coloring to the marshmallow mixture, mixed it all together and cut them out with a pumpkin shaped cookie cutter.

Wa-lah...EASY PEASY!


Two easy recipes that will make the kiddos smile! Next up will be our mummy dogs and tatertot bugs!
and then the Pumpkin cake!  Don't worry...I'll be telling you all how to make them...if you don't already know how!

Look What I Did...You Can Too!
